Hello everyone! This whole week has been a blur for me, having the worst flue of my life. My nose was raining constantly and my whole body was a wreck. I think I got the "manflue" deluxe! BUT I survived and I am starting to feel better. Counting down the hours until I can go to the gym again. I have felt so restless but at the same time super weak.
I have been pushing the interviews for next week, due to the sickness. So that is something that will come up too. I will also tell my own story about my trauma about witnessing abuse at home. Many has seen my documentary “Say Something” and know how much it affected me. But I have never told my real story of when we lived in the middle of it.
In our home I am the one who cooks. Hector really don’t like cooking. I love to do it, so I am the chief here. One of my goals for this year is to go to a cooking class. I want to get more knowledge of what ingredients goes together and get more delicious ideas. Of course, I want to impress my husband as well.
Hector was asking for a stew the other day. He just wanted some meat with sauce, and I gave my all and tried a recipe. It was so good, I made it 3 days in a row 😅
Red wine stew
600 g boneless beef
1 teaspoon salt
1 teaspoon black pepper
1 1/2 tablespoon flour
1 tablespoon tomato paste
2 bay leafs
1 tablespoon dried thyme
2 dl red wine
2 1/2 dl meat broth
2 onions or 8 steak bulbs
2 cloves or garlic
Cut the meat into pieces and brown it around in butter & rapeseed oil in a frying pan. Put it in a pot. Salt and pepper. Stir in flour, tomato paste, bay leaf and thyme. Pour on wine and broth. Let the pot boil under the lid for about 1 ½ hours.
Scale and divide the bulbs. Scale and chop the garlic. Share the sponge, onion, garlic and mushrooms in butter & rapeseed oil in the frying pan. Put it in the pot and let it boil for about 10 minutes. Sprinkle over chopped parsley and serve with boiled potatoes or rice.
Right now, hubby is playing PS4 and I need to start cleaning the house, but to be honest, I really don’t feel like doing it today. But the house is a mess.
